Braised Beef with Red Wine and Gin

It is still cold outside with below negative temperature. It is hard to believe that spring is just around the corner. Sometimes, I just need some comfort food. Today I am going to share this recipe with you. This hearty braised beef stew has tons of flavours with a refreshing punch of gin. I learned that cooking with gin can add the sharpness and pine and citrus notes to balance the rich flavour of the beef stew.

2 lbs braising beef
1 large onion, coarsely chopped
2 chopped carrots
2 chopped sweet potatoes
3 bay leaves
1 anise
1 cup red wine
1/3 cup gin
2 cups water
1/8 cup cranberries

  1. Cut the beef into large cubes. Season with salt and peppe. Cut vegetables into large chunks.
  2. Heat 2 tbsp olive oil in a large heavy-based pot. Add the beef and fry on all sides until evenly browned. Remove to a plate.
  3. Heat 1tbsp oil in the pan if you need it, then add vegetables. Stir quickly for 5 minutes until onion is soft . Return the beef to the pan and add the wine and gin. Add anise, bay leaves, cranberries and water. Bring to the boil, stirring to scrape up the juices. Sprinkle with salt and pepper.
  4. Reduce the heat to low, cover with a lid and simmer for 1 hour until the beef is tender. Taste and add more seasoning if necessary. Simmer for a further 5 minutes until the sauce has thickened.
